Hey, Karen...
The recipe for the blackberry cobbler is UBER-SIMPLE!
I make it with "Bisquick"!
I mix up about 3 cups of the Bisquick with just enough milk to make the dough kind of "sticky" and pliable and add a couple of tablespoons of sugar to it.
I rub butter (actually "margarine") on the bottom and sides of the the pan first and then I "line" the bottom and sides of the pan (kind of "thickly") with all but about 3 heaping tablespoons of the dough.
I heap the blackberries into the pan that's lined with dough -- pressing them down a few times with my hand in order to really "pack 'em in there".
Then I sprinkle about a quarter to a half cup of sugar over the top of the blackberries when the pan is full and put a few pats of butter on top of that. Then I take the 2 or 3 tablespoons of the dough that I saved aside and make little, flatish, irregular pieces which I arrange (just kind of "floating") on the very top.
I bake it at about 375 for anywhere from 15 to 20 minutes until it's brown on the top and sides and (the best part of all) EAT IT!! ...lol...
It's really super simple and good, too!
I imagine it would work for just about any kind of berry (or even "fruit") that you might have, too!
Enjoy!
